While most people associate this holiday with candies and treats, there’s no reason you can’t start your Halloween day with a delightful and festive breakfast! Whether you’re fueling up for a day of trick-or-treating or just want to add a touch of Halloween spirit to your morning, one of your favorite Winchester restaurants, Swanton Street Diner, has you covered with two ghoulishly good Halloween-themed breakfast recipes.
Pumpkin Pancakes with Cinnamon Syrup
Ingredients
For the Pumpkin Pancakes:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 cup pumpkin puree
- 1 large egg
- 1 cup buttermilk
- 2 tbsp melted butter
- 1 tsp vanilla extract
For the Cinnamon Syrup:
- 1/2 cup maple syrup
- 1/2 tsp ground cinnamon
- A pinch of nutmeg
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and spices (cinnamon, nutmeg, and ginger).
- In another bowl, whisk together the pumpkin puree, egg, buttermilk, melted butter, and vanilla extract until well combined.
- Gently fold wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
- Preheat a griddle or large skillet over medium heat and lightly grease it.
- Pour 1/4 cup portions of the pancake batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- While the pancakes are cooking, make the cinnamon syrup by warming the maple syrup in a small saucepan and stirring in the ground cinnamon and nutmeg.
- Serve the pumpkin pancakes hot, drizzled with the warm cinnamon syrup.
Mummy Egg Breakfast Tarts
Ingredients
- 4 store-bought or homemade pastry tarts (puff pastry or pie crust)
- 4 large eggs
- 1/4 cup grated cheddar cheese
- 4 slices of bacon
- Salt and pepper, to taste
- Ketchup or sriracha (optional, for decoration)
Instructions
- Preheat your oven according to the pastry tart instructions.
- While the oven is heating, cook the bacon slices in a skillet until they are crispy. Drain on paper towels and break each slice into smaller pieces to create the mummy’s “bandages.”
- Roll out the pastry tarts and cut them into mummy shapes. You can use a knife or cookie cutters to create the shape.
- Place the mummy-shaped pastry tarts on a baking sheet and carefully crack an egg into each one. Season with salt and pepper.
- Sprinkle grated cheddar cheese over the eggs, leaving a small space for the mummy’s “eyes.”
- Place the bacon pieces over the eggs and cheese to create the mummy’s “bandages.”
- Bake in the preheated oven according to the tart instructions or until the pastry is golden and the eggs are cooked to your desired level of doneness.
- Remove from the oven and let them cool slightly. Use ketchup or sriracha to create two small dots for the mummy’s eyes.
